Until you get good, dont go get shit down over and over in a pilot lobby. Grab a buddy who also wants to learn and experiment with him in an empty GTA 'free mode' at the airport. If a buddy is not available, join a game where everyones playing on the ground and practice on them. Remember, dont stay the big fish in a small pond or you will never really be that good. GTA 5 Pilots GTA 4 TBOGT Buzzard Pre Flight Checklist

Checklist More Information
Health & Body Armor In GTA it is very important to pick up body armor any chance you get. The only time you shouldnt go pick up body armor before you get in a helicopter is if a pilot is chasing you and trying to prevent you from getting in the air giving you only a limited window to get in the chopper. If you get in a helicopter with no armor and you know that you will lose without body armor, there is no point in fighting. Remember, in GTA, theres nothing wrong with 'running' if your coming right back:). If your low on health, dont try to pick it up before you get airborne because unlike armor where you have to get out of your aircraft to pick it up, you can just roll over any health pack and youll be good to go.
Helicopter Windshield, Windows, & Body In GTA V, ALWAYS make sure that you helicopter is not damaged in any way. Broken windows or windshields will be your downfall if you dont keep them intact. If your windows are out, your helicopter will not feel the same at all. It will be too wobbly and unstable. Even if you bump your helicopter somewhere and it gets dented, it will throw off your choppers handling. In GTA, anytime you have a bump somewhere, go pick up a fresh health pack. Never land hard on a health pack because the ground will break your windows again and youll be in the same position.
Controller & Display Make sure that your controller settings are correct. Switch to your preferred aim sensitivity and turn controller vibration off. Also check your brightness/contrast display settings and be sure to change them according to the time of day and weather. If its night turn your brightness up and for when the sun is up, turn your brightness down. You would be surprised at what a difference these settings can make in a GTA dogfight.
Radar & Map Awareness Always keep an eye on GTA radar/mini map. If a pilot is inside your radar it means he or she is in shooting range. If your being chased by someone from the other side of the city, know exactly how long it will take your pursuer to get to you and plan your trip to a helicopter accordingly. If a person just keeps killing you everytime you get to a helicopter and wont let you fly, its better to get inside some alleys hoping he will crash or just get bored and leave at which point you can sneak to a helicopter. If you keep shooting at him from the ground, he will stay with you, therefore keeping you from the helicopters.
General Awarness Know your surroundings and know your enemy. Before you get in a helicopter looking to start trouble, get a feel for the lobby. Are there modders in here? Whos friends with who? Whos the dominant pilot? Are there a lot of people after him or her? Who can be trusted? And theres many more things that you will start to notice as you put in your piloting time.
Misc If your helicopter flips, dont keep hitting the acceleration and turning like a mad man. Simply release every button and press deceleration(opposite of your acceleration button) and this will turn your chopper back over. Remember if you stay flipped for too long, your propellers will break. If you dont panic pressing random buttons and just press deceleration, you will flip right back over
